The Westin Resort Nusa Dua, Bali, has appointed Rajender Kumar Maitola as Indian Chef. He has arrived in Bali following a three year stint as Junior Sous Chef with Sujan Luxury Hotel, Delhi.
Chef Rajender studied at the Delhi Institute of Hotel Management & Catering Technology. Upon graduating, he embarked on a culinary career with the prestigious Aman chain of hotels and resorts.
He quickly rose through the kitchen hierarchy with a succession of appointments including time as Chef de Partie at Aman-I-Khas, Sawai Madhopur, Rajasthan and then Aman Lodi, New Delhi.
These were both pre-opening roles that saw Chef Rajender instrumental in menu setting and standard operational procedures.
There are many parallels between Indian and Balinese cuisine including the use of indigenous herbs and spices. As a fellow devotee of the Hindu faith, Chef Rajender is looking forward to sampling local delicacies as well as experiencing some of the religious ceremonies.
Once settled into his new role Chef Rajender will be revitalizing the menu of Indian cuisine currently available at the resort. He will also introduce a few of his own specialty dishes from the different regions of the country.
